Pasta With Mushrooms And Carrots


Yields: 2 servings

Ingredients:

3 cups mushrooms
2 cups carrots, diced
2 packs tofu noodles
2 cloves garlic
1 tsp almond flour

2 tbsp butter
3⁄4 tub heavy cream
1⁄4 tsp black pepper
1⁄4 tsp sea alt
A pinch of dried parsley
Fresh parsley, chopped
Olive oil

Method:

1. Drain the tofu noodles and rinse. Set the pasta aside.
2. Place a frying pan over medium heat and melt the butter. Add
the carrots and garlic and cook for about one minute.
3. Place the mushrooms in the frying pan. Use a spatula to swirl
the mushrooms around to get an even coating of the oil. Cook for
about five minutes and make sure to stir regularly. The mushrooms
should turn a golden-brown color.
4. Scoop out the mushrooms and leave the oil in the pan.
5. Pour the almond flour, cream, and parsley into the pan and
stir. Mix the ingredients with the oil in the pan.
6. Sprinkle some salt and pepper into the pan and continue
heating for two more minutes.
7. Pour the pasta and mushrooms into the pan and mix well.
8. Serve hot topped with parsley.
