Pork And Cabbage Casserole


Yield: 8 servings

Ingredients:

14 oz smoked pork chops, cubed
Medium-sized green cabbage, cored and sliced
1 cup onion
1 1⁄2 cups crushed tomatoes
14 1⁄2 oz can diced tomatoes
1⁄4 cup parsley, chopped
1 1⁄2 cups Mozzarella cheese
4 cloves garlic, minced
1 red bell pepper
2 tbsp organic butter
2 tbsp olive oil
Black pepper and sea salt, to taste

Method:

1. Preheat oven to 400 degrees F.
2. Place a large skillet on medium heat and heat the butter and
olive oil

3. When the butter has melted, toss in the cabbage slices, bell
pepper, garlic, onion, black pepper, and salt. Sauté the ingredients
until the cabbage wilts and the other veggies become tender. This
should take about 10 minutes.
4. Add the crushed tomatoes, diced tomatoes, and smoked pork
chop cubes. Sauté for another 10 minutes.
5. Pour the mixture into a casserole dish and grate the cheese
over the dish.
6. Place the casserole dish into the oven and bake for about 15
minutes.
7. Remove the casserole and sprinkle the chopped parsley over it.
8. Serve and enjoy! (This one is great because you make a big
batch and then you have lunch every day for that whole week)
