Smoked Ham, Spinach, And Cheese Frittata Cups


Yield: 12 cups

Ingredients:  

  7 oz smoked ham, chopped
6 large eggs
1 cup spinach leaves, finely chopped
1⁄2 cup Mexican shredded cheese
1⁄4 tsp Himalayan sea salt
2 cloves garlic, minced
1 tsp black pepper powder
1⁄4 tsp ground chili powder
1 tsp fresh rosemary, chopped

Method:

1. Preheat your oven to 350 degrees Fahrenheit. Use parchment
paper to line a large muffin pan that holds 12 cups.
2. In a large bowl, mix the chopped spinach leaves, ham, cheese,
rosemary, and garlic together. Stir well to ensure even distribution.
3. Take another mixing bowl and pour in the eggs, sea salt, chili
powder, and black pepper. Whisk well until you get a frothy
mixture. Pour the mixture into the bowl containing ham and
spinach mixture. Mix well.
4. Pour this mixture into the 12 muffin cups. Don’t fill to the top.
Only fill 3⁄4 of each cup.
5. Place the muffin pan into the oven and cook for 25 minutes.
The top of the muffins should be slightly colored.
6. Let the muffins cool for five minutes and then remove the
frittatas from the cups.
7. Serve either hot or cold sprinkled with shredded coconut.
