Swiss Chard And Egg Pie

Yield: 8 servings/wedges


8 cups Swiss chard, chopped
1 lb sausage
3 eggs
1⁄2 cup chopped onions
2 cups ricotta cheese
1⁄4 cup parmesan, shredded
1 cup mozzarella, shredded
1 tbsp olive oil
1⁄8 tsp ground nutmeg
1 clove garlic
Salt and pepper, to taste


1. Preheat the oven to 350 degrees F.
2. Place a large pan over medium-low heat and pour the olive oil
into it. Sauté the onions and garlic until soft.
3. Pour in the Swiss chard and cook until the stems turn soft and
leaves become wilted. Remove the pan from heat and let it cool.
4. As the chard cools, take a large mixing bowl and pour in the
eggs, ricotta, mozzarella, and parmesan. Mix thoroughly before
stirring in the sautéed Swiss chard.
5. Take your pie tin and squeeze the sausage into it uniformly.
Pour the filling into the pie tin and place the container on a cookie
sheet. Bake in the oven until firm.
6. Serve with extra cheese on top if desired.
