Vanilla Cream Crepe “Coffee Cake”


Yield: 4 servings

Ingredients:

For The Crepes:
2 large eggs
1⁄4 cup almond flour
2 tbsp butter
2 oz cream cheese
1 tsp unsweetened soy milk
For The Topping And Filling;
6 large strawberries
1⁄2 tsp vanilla extract
4 oz heavy cream

Method:

1. The first step is to make the batter for the crepes. Break the
eggs into a food processor and then add the cream cheese and
almond flour. Mix the ingredients well. Pour in the soy milk and
process the ingredients until you get a smooth consistency. Add
more soy milk if necessary to thin the mixture.
2. Place a frying pan over medium heat. Melt some of the butter
in the pan and grease the surface evenly. When the butter becomes

hot, pour two tablespoons of the batter into the pan and swirl it to
ensure a thin layer.
3. When the edges of the crepe turn brown, use a spatula to flip it
over to the other side. Cook until the crepe turns slightly brown
and then remove it from the pan.
4. Use the remaining batter to make the rest of the crepes. There
should be enough to make five more. Allow all the crepes to cool.
5. As the crepes cool, prepare the filling. Pour the heavy cream
and vanilla extract into the food processor and mix well. If you
prefer, you can add some artificial sweetener to sweeten the
filling.
6. Arrange the crepes in a neat stack and then use a sharp knife to
cut the stack in half.
7. Take one crepe (or rather half-crepe) and place it on a serving
plate. Spread some of the cream and vanilla filling over the top of
the crepe, making sure that it is a thin layer. Take another crepe,
stack it on top of the first one, and spread another thin layer of
filling. Repeat the process until you have used all the crepes.
8. When you are done, put the crepes in the fridge for about an
hour.
9. Meanwhile, slice the strawberries into halves.
10. After one hour, remove the crepes and top off with some
cream and the halved strawberries.
